You'll need

  • 4 egg whites, room temp
  • 1 cup (220 g) caster sugar
  • 2 tsp cornflour
  • 1 tsp white vinegar
  • 1 tsp vanilla
  • 300 ml thickened cream
  • 3–4 passionfruit
  • 1 punnet strawberries

The method (4 of 11 steps)

  1. Wipe the bowl with a little vinegar.Why: any trace of grease stops the whites whipping. Plastic bowls hold grease no matter how you wash them.
  2. Separate the eggs one at a time over a small cup.Why: one speck of yolk ruins the lot. Break one into the cup and you've lost one egg, not four.
  3. Add the sugar ONE tablespoon at a time.Why: undissolved sugar is what makes a pav weep sticky beads.
  4. Cool it in the oven, door propped with a wooden spoon.Why: a pav cracks when it meets a cool kitchen too fast.
